French Bakery Set to Open at 3rd Ave., Currently Hiring

By: Rich Hosford

The 3rd Ave. development project will soon have a bit of French flair.

PAUL Bakery, an internationally-known French bistro with locations in 30 countries, will be opening at the end of June, according to a Facebook post. The new restaurant will be located at 62 Second Avenue.

According to its web site, PAUL Bakery was founded in 1889 in the city of Croix, in Northern France. It specializes in serving French products, including breads, crepes, sandwiches, macarons, soups, cakes, pastries, coffee, wine and beer. According to the web site for 3rd Ave., "Throughout the day, PAUL will serve an array of pastries, quiches and other egg dishes, crepes, sandwiches made on fresh baguettes, fresh salads, and soup. PAUL’s breads are made fresh daily from an organic, locally sourced flour mill exclusively for PAUL, are naturally fermented and are made without additives or preservatives."

Kevin Barry, PAUL USA construction manager, told the Planning Board last fall  that the Burlington location will be decorated in such a way that it will make customers feel like they are in Paris. There will be three different rooms with their own special feel and atmosphere. The restaurant will have 132 seats, including 60 outside on a terrace.

The bistro is also hiring for a variety of positions, including cashiers, baristas, servers, hosts, pastry chefs, cooks, dishwashers and management positions. Click here for more information
